Baked Oats with Pear, Cinnamon & Walnuts

Warm baked oats with soft pear, cinnamon, walnuts and flaxseed for a comforting winter breakfast.

Oats provide beta-glucan soluble fibre, while pear and flaxseed add further dietary fibre. Walnuts provide unsaturated fats, including plant-based omega-3 fatty acids.

  • 100 g rolled oats
  • 1 ripe pear, diced
  • 1 egg
  • 200 ml milk or unsweetened plant-based milk
  • 1 tbsp ground flaxseed
  • 20 g walnuts, roughly chopped
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 1 tsp vanilla extract

Method

  1. 1 Preheat the oven to 180°C.
  2. 2 Mix the oats, flaxseed, cinnamon and baking powder in a baking dish.
  3. 3 Whisk together the egg, milk and vanilla and pour over the oats.
  4. 4 Fold through most of the diced pear.
  5. 5 Top with the remaining pear and walnuts.
  6. 6 Bake for 20–25 minutes until golden and set.
  7. 7 Serve warm.
