Raspberry & Kefir Overnight Oats
Creamy overnight oats with kefir, raspberries, chia seeds and almonds for an easy fibre-rich breakfast.
Kefir provides live cultures, while oats, raspberries and chia seeds provide a mixture of soluble and insoluble fibre to support a diverse gut microbiome.
Plus overnight chilling.
Method
- 1 In a jar or bowl, stir the oats, kefir, milk, chia seeds and cinnamon together until the chia seeds are evenly spread through rather than clumped in one spot.
- 2 Gently crush half the raspberries with the back of a fork — just enough to release their juice — and stir them through the oat mixture so it turns a light pink.
- 3 Cover and refrigerate overnight, or for at least 4 hours, until the oats have softened and absorbed most of the liquid and the mixture holds together like a thick porridge rather than a runny liquid.
- 4 The next morning, give it a good stir — the chia seeds continue to thicken it overnight, so loosen with a splash of milk if it feels too stiff to eat comfortably.
- 5 Top with the remaining whole raspberries, flaked almonds and a small drizzle of honey if using, then serve straight from the fridge.
