A warm and creamy chia-oat pudding topped with softly stewed pear and cinnamon.

Chia seeds and oats provide a mixture of soluble and insoluble fibre, while pear contributes additional fibre and natural sweetness. Gently cooking the fruit creates a soft, comforting texture for colder mornings.

  • 35 g rolled oats
  • 1½ tbsp chia seeds
  • 250 ml unsweetened plant-based milk
  • 1 ripe pear, diced
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tbsp ground almonds
  • 2 tbsp water

Method

  1. 1 Add the pear, half the cinnamon and water to a small saucepan.
  2. 2 Cook gently for 5–7 minutes until soft.
  3. 3 In a separate saucepan, combine the oats, chia seeds, milk, remaining cinnamon and vanilla.
  4. 4 Cook over low heat for 5–7 minutes, stirring regularly, until thick and creamy.
  5. 5 Spoon into a bowl and top with the warm stewed pear.
  6. 6 Sprinkle with ground almonds and serve immediately.
