Turmeric Roasted Chickpeas
Crunchy, golden chickpeas spiced with turmeric and paprika, a satisfying high-fibre snack.
Chickpeas provide fibre and plant protein, while turmeric contains curcumin, a compound commonly used in anti-inflammatory cooking.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- ½ tsp turmeric
- ½ tsp paprika
- Pinch of sea salt and black pepper
Method
- 1 Preheat the oven to 200°C (180°C fan).
- 2 Drain and rinse the chickpeas, then pat them thoroughly dry with a paper towel — this is the step that determines whether they crisp up or stay soft, so take an extra minute here.
- 3 Toss the dried chickpeas with the olive oil, turmeric, paprika, salt and pepper in a bowl until every chickpea is evenly coated and turned golden by the turmeric.
- 4 Spread them in a single layer on a baking tray, giving them space so they roast rather than steam.
- 5 Roast for 20–25 minutes, shaking the tray halfway through, until deeply golden and crunchy all the way through — let them cool for a few minutes before eating, as they continue to crisp as they cool.
