Chickpeas provide fibre and plant protein, while turmeric contains curcumin, a compound commonly used in anti-inflammatory cooking.

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • ½ tsp paprika
  • Pinch of sea salt and black pepper

Method

  1. 1 Preheat the oven to 200°C (180°C fan).
  2. 2 Drain and rinse the chickpeas, then pat them thoroughly dry with a paper towel — this is the step that determines whether they crisp up or stay soft, so take an extra minute here.
  3. 3 Toss the dried chickpeas with the olive oil, turmeric, paprika, salt and pepper in a bowl until every chickpea is evenly coated and turned golden by the turmeric.
  4. 4 Spread them in a single layer on a baking tray, giving them space so they roast rather than steam.
  5. 5 Roast for 20–25 minutes, shaking the tray halfway through, until deeply golden and crunchy all the way through — let them cool for a few minutes before eating, as they continue to crisp as they cool.
