Avocado & Edamame Rice Cakes
Crisp rice cakes topped with smashed avocado, edamame, lime and sesame seeds.
Avocado and edamame provide fibre, while edamame also adds plant protein. The combination of protein, fibre and unsaturated fat makes this a more substantial alternative to plain rice cakes.
Ingredients

- 4 wholegrain rice cakes
- ½ avocado
- 80 g cooked shelled edamame
- Juice of ½ lime
- 1 tsp sesame seeds
- Pinch of chilli flakes, optional
- Black pepper, to taste
Method
- 1 Mash the avocado with the lime juice and black pepper.
- 2 Roughly crush half of the edamame with a fork and stir it into the avocado.
- 3 Spread the mixture evenly over the rice cakes.
- 4 Top with the remaining whole edamame.
- 5 Sprinkle with sesame seeds and chilli flakes if using and serve immediately.
