⏱ 10 min total 🍴 Serves 6

A refreshing frozen kefir and yoghurt bark topped with berries, pistachios and chia seeds.

Kefir and yoghurt can provide live cultures, while berries and chia seeds add fibre and polyphenols. Pistachios contribute additional fibre and unsaturated fats.

Plus freezing.

Frozen Kefir Berry Bark

Method

  1. 1 In a bowl, whisk the kefir, Greek yoghurt and vanilla together until completely smooth with no streaks.
  2. 2 Line a small tray with baking paper (this stops the bark sticking once frozen) and pour in the mixture, tilting the tray so it spreads into an even layer about 1cm thick.
  3. 3 Scatter the berries, pistachios and chia seeds evenly over the surface, pressing them very lightly so they sit half-submerged rather than resting loose on top.
  4. 4 Drizzle with honey in a thin zigzag if using.
  5. 5 Freeze for at least 3 hours, or until completely solid and firm to the touch.
  6. 6 Break or cut into rough pieces with a sharp knife and serve straight from the freezer — it softens quickly at room temperature, so keep the rest frozen until you're ready for more.
