Warm cinnamon-roasted apple topped with creamy Greek yoghurt and a simple oat and walnut crumble.

Apples and oats provide dietary fibre, while walnuts contribute unsaturated fats. Greek yoghurt adds protein and provides a creamy contrast to the warm fruit.

  • 2 apples, cored and chopped
  • ½ tsp cinnamon
  • 40 g rolled oats
  • 20 g walnuts, chopped
  • 1 tsp olive oil
  • 150 g plain Greek yoghurt
  • ½ tsp vanilla extract

Method

  1. 1 Preheat the oven to 190°C.
  2. 2 Add the chopped apples to a small baking dish and sprinkle with half the cinnamon.
  3. 3 Mix the oats, walnuts, olive oil and remaining cinnamon and scatter over the apples.
  4. 4 Bake for 18–20 minutes until the apples are soft and the oat topping is lightly golden.
  5. 5 Mix the Greek yoghurt with the vanilla.
  6. 6 Divide the warm apple crumble between two bowls and serve with the yoghurt.
