Soft eggs with wilted spinach, tomatoes, feta and herbs for a quick Mediterranean-inspired breakfast.

Eggs provide high-quality protein, while spinach and tomatoes contribute fibre, antioxidants and micronutrients. Extra-virgin olive oil provides predominantly unsaturated fats characteristic of a Mediterranean-style diet.

Mediterranean Eggs with Spinach & Feta

  • 2 eggs
  • 1 tsp extra-virgin olive oil
  • 1 large handful baby spinach
  • 6 cherry tomatoes, halved
  • 30 g feta
  • ½ tsp dried oregano
  • 1 tbsp chopped fresh parsley
  • Black pepper, to taste
  • Optional: 1 slice sourdough to serve

Method

  1. 1 Heat the olive oil in a small frying pan over medium heat.
  2. 2 Add the tomatoes and cook for 2–3 minutes until beginning to soften.
  3. 3 Add the spinach and cook briefly until just wilted.
  4. 4 Crack in the eggs and cook gently until the whites are set but the yolks remain soft, or cook to your preference.
  5. 5 Crumble over the feta and sprinkle with oregano, parsley and black pepper.
  6. 6 Serve immediately, with sourdough if desired.
