Turkey & Vegetable Shepherd’s Pie
Lean turkey and vegetables in a rich tomato gravy topped with creamy sweet potato mash.
Turkey provides lean protein, while sweet potato, carrots, peas and courgette add fibre and a range of plant foods. Sweet potato makes a colourful, nutrient-dense alternative to a traditional potato topping.
Ingredients

- 500 g lean turkey mince
- 700 g sweet potato, peeled and chopped
- 2 carrots, diced
- 1 courgette, diced
- 100 g frozen peas
- 1 tbsp olive oil
- 1 tbsp tomato purée
- 300 ml low-salt chicken stock
- 1 tsp dried thyme
- 2 tbsp milk or unsweetened plant-based milk
- Black pepper, to taste
Method
- 1 Preheat the oven to 190°C.
- 2 Boil the sweet potato for 15–20 minutes until soft. Drain, mash with the milk and set aside.
- 3 Meanwhile, heat the olive oil in a large frying pan and cook the turkey mince for 5–6 minutes.
- 4 Add the carrots and courgette and cook for another 5 minutes.
- 5 Stir in the tomato purée, chicken stock, thyme and peas and simmer for 10 minutes.
- 6 Transfer the turkey mixture to a baking dish and spread the sweet potato mash evenly over the top.
- 7 Bake for 20 minutes until piping hot and lightly golden.
