Method

  1. 1 Heat the oven to 190°C / 170°C fan. Peel and dice the potato, then put it into a pan of cold water. Bring to the boil and cook for 15-20 minutes, until a knife slides in easily.
  2. 2 Meanwhile, heat the oil in a small pan over medium heat. Add the turkey mince and cook for about 5 minutes, breaking it into small pieces with a wooden spoon, until no longer pink.
  3. 3 Stir in the carrot and stock, bring to a gentle simmer, then cover and cook for 15 minutes, until the carrot is very soft and the turkey is cooked through.
  4. 4 Stir in the cornflour mixture and simmer, stirring constantly, until the sauce lightly thickens and coats the back of a spoon. Add a splash of water if it looks too thick.
  5. 5 Drain the potato well and mash with the milk until smooth.
  6. 6 Spoon the turkey mixture into a small ovenproof dish and spread the mash evenly on top. Bake for 10-15 minutes until piping hot throughout when tested in the centre.
