⏱ 20 min total 🍴 Serves 1

Small pasta shapes with flaked tuna and soft courgette. A little cooking water keeps the dish moist.

Tuna supplies protein; pasta provides starchy carbohydrate; olive oil adds energy. Adaptation: swap the courgette for very well-cooked peeled carrot, or use chicken or plain tofu for a fish-free version. Contains: fish and wheat (gluten); milk if used.

Soft tuna and courgette pasta

Method

  1. 1 Cook the pasta according to the packet instructions in a pan of boiling water.
  2. 2 Add the courgette to the same pan for the last 6-8 minutes of cooking, extending the time slightly if needed, until both the pasta and courgette are soft.
  3. 3 Drain, reserving a little of the cooking water in a cup, then return the pasta and courgette to the pan.
  4. 4 Flake in the tuna with a fork, breaking it into small pieces.
  5. 5 Add the oil, milk or water, and enough of the reserved cooking water to loosen everything to a moist texture.
  6. 6 Stir over a gentle heat until piping hot throughout, then serve immediately.
