Chicken, carrot and ginger rice soup
A warming one-pot lunch, made without stock cubes so there is no hidden garlic or onion.
Softer option: Add a little extra water and simmer until the rice is very soft. Break up the chicken finely before serving.
Method
- 1 Warm the oil in a saucepan over medium heat. Add the carrots and ginger and cook gently for 2 minutes, stirring, without letting them brown.
- 2 Add the water, rice and chicken and stir to combine.
- 3 Bring to a gentle boil, then reduce the heat and simmer for 18-22 minutes, stirring occasionally so the rice doesn't settle and stick, until the rice and carrots are soft and the chicken shows no pink when a piece is cut open.
- 4 Add more hot water, a little at a time, to reach your preferred consistency.
- 5 Stir in the parsley and divide between two bowls.
