Mediterranean Chicken & Butter Bean Casserole
Tender chicken and butter beans cooked with tomatoes, peppers, spinach and Mediterranean herbs.
Chicken provides high-quality protein, while butter beans and vegetables contribute fibre and plant variety. Tomatoes, herbs and extra-virgin olive oil give the casserole its Mediterranean-style flavour.
Ingredients

- 500 g skinless chicken breast or thigh, chopped
- 1 × 400 g tin butter beans, drained and rinsed
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 × 400 g tin chopped tomatoes
- 100 g baby spinach
- 1 tbsp extra-virgin olive oil
- 1 tsp dried oregano
- ½ tsp dried thyme
- 250 ml low-salt chicken stock
- Fresh parsley, to serve
Method
- 1 Preheat the oven to 190°C.
- 2 Heat the olive oil in an ovenproof casserole dish and brown the chicken for 4–5 minutes.
- 3 Add the peppers and cook for another 3 minutes.
- 4 Stir in the butter beans, tomatoes, oregano, thyme and chicken stock.
- 5 Cover and bake for 25 minutes, or until the chicken is completely cooked through.
- 6 Stir through the spinach and allow it to wilt in the hot casserole.
- 7 Finish with fresh parsley before serving.
