Mediterranean Chicken & Butter Bean Casserole

Tender chicken and butter beans cooked with tomatoes, peppers, spinach and Mediterranean herbs.

Chicken provides high-quality protein, while butter beans and vegetables contribute fibre and plant variety. Tomatoes, herbs and extra-virgin olive oil give the casserole its Mediterranean-style flavour.

  • 500 g skinless chicken breast or thigh, chopped
  • 1 × 400 g tin butter beans, drained and rinsed
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 × 400 g tin chopped tomatoes
  • 100 g baby spinach
  • 1 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 250 ml low-salt chicken stock
  • Fresh parsley, to serve

Method

  1. 1 Preheat the oven to 190°C.
  2. 2 Heat the olive oil in an ovenproof casserole dish and brown the chicken for 4–5 minutes.
  3. 3 Add the peppers and cook for another 3 minutes.
  4. 4 Stir in the butter beans, tomatoes, oregano, thyme and chicken stock.
  5. 5 Cover and bake for 25 minutes, or until the chicken is completely cooked through.
  6. 6 Stir through the spinach and allow it to wilt in the hot casserole.
  7. 7 Finish with fresh parsley before serving.
