Lemon Herb Salmon with Greens

A simple, elegant salmon dinner with Mediterranean herbs, wilted spinach and lentils or brown rice.

Salmon provides omega-3 fatty acids that support gut lining integrity, while leafy greens and whole grains add fibre and important micronutrients.

  • 2 salmon fillets
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • 2 cups fresh spinach
  • 1 cup cooked lentils or brown rice
  • Salt and black pepper, to taste

Method

  1. 1 Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
  2. 2 Place the salmon fillets on the tray, drizzle with olive oil and lemon juice, then sprinkle with dried oregano and season with salt and pepper — rub gently so the seasoning sticks.
  3. 3 Bake for 12–15 minutes depending on thickness, until the salmon flakes easily with a fork and is opaque in the centre — check the thickest part of the fillet, as it will still look slightly translucent when perfectly cooked and firm up further as it rests.
  4. 4 While the salmon bakes, heat a splash of olive oil in a small pan over medium heat and sauté the spinach for 1–2 minutes, tossing constantly, until just wilted — remove it from the heat as soon as it collapses, as it keeps cooking in the residual heat.
  5. 5 Warm the cooked lentils or brown rice through, then serve the salmon on top of the spinach with the lentils or rice alongside.
