Ginger Salmon & Brown Rice Broth Bowl
Flaked salmon, brown rice, edamame and vegetables served in a fragrant ginger and lime broth.
Salmon provides long-chain omega-3 fatty acids, while brown rice, edamame and vegetables contribute fibre. Edamame also provides plant protein, making this a particularly satisfying broth-based meal.
Ingredients

- 2 salmon fillets
- 250 g cooked brown rice
- 100 g shelled edamame
- 1 carrot, cut into ribbons
- 2 handfuls baby spinach
- 15 g fresh ginger, grated
- 600 ml low-salt vegetable stock
- 1 tbsp reduced-salt tamari
- Juice of ½ lime
- 1 tsp sesame seeds
Method
- 1 Preheat the oven to 190°C and bake the salmon for 12–15 minutes until cooked through.
- 2 Meanwhile, add the vegetable stock, ginger and tamari to a saucepan and bring to a gentle simmer.
- 3 Add the edamame and carrot and cook for 3–4 minutes.
- 4 Add the spinach and cooked brown rice and warm through.
- 5 Divide between two bowls and flake the cooked salmon over the top.
- 6 Finish with lime juice and sesame seeds.
