Ingredients

  • ·2 chicken breasts, thinly sliced
  • ·1 tbsp olive oil or avocado oil
  • ·1 tbsp fresh grated ginger
  • ·1 garlic clove, minced
  • ·1 carrot, thinly sliced
  • ·1 red pepper, sliced
  • ·1 courgette, sliced
  • ·2 tbsp coconut aminos or tamari
  • ·1 tsp sesame oil
  • ·1 cup cooked brown rice
  • ·Salt and black pepper, to taste

Method

    Heat oil in a large pan or wok over medium-high heat.

    Cook sliced chicken for 6–8 minutes, stirring frequently, until cooked through. Remove and set aside.

    Add ginger and garlic to the same pan; cook 1 minute until fragrant.

    Add carrot, red pepper and courgette. Stir fry for 5–6 minutes until tender but still crisp.

    Return chicken to the pan.

    Stir in coconut aminos and sesame oil. Cook 1–2 more minutes.

    Season with salt and pepper. Serve over brown rice.
