🥜 Protein Date & Nut Energy Balls
No-bake energy balls made with Medjool dates, almonds and cocoa — naturally sweet and nutrient-dense.
Ingredients
- ·1 cup Medjool dates, pitted
- ·½ cup almonds
- ·¼ cup peanut butter or almond butter
- ·2 tbsp chia seeds
- ·2 tbsp unsweetened cocoa powder
- ·1 tbsp coconut oil
- ·1 tsp vanilla extract
- ·Optional: 1 tbsp water if mixture is too dry
- ·Optional: 2 tbsp shredded coconut for rolling
Method

Pulse almonds in a food processor until finely chopped.

Add dates, nut butter, chia seeds, cocoa powder, coconut oil and vanilla.

Blend until a sticky dough forms. Add 1 tbsp water if too dry.

Roll the mixture into 10 small balls.

Optional: roll in shredded coconut.

Refrigerate in an airtight container for up to 1 week.
