Ingredients

  • ·1 cup Medjool dates, pitted
  • ·½ cup almonds
  • ·¼ cup peanut butter or almond butter
  • ·2 tbsp chia seeds
  • ·2 tbsp unsweetened cocoa powder
  • ·1 tbsp coconut oil
  • ·1 tsp vanilla extract
  • ·Optional: 1 tbsp water if mixture is too dry
  • ·Optional: 2 tbsp shredded coconut for rolling

Method

    Pulse almonds in a food processor until finely chopped.

    Add dates, nut butter, chia seeds, cocoa powder, coconut oil and vanilla.

    Blend until a sticky dough forms. Add 1 tbsp water if too dry.

    Roll the mixture into 10 small balls.

    Optional: roll in shredded coconut.

    Refrigerate in an airtight container for up to 1 week.
