  • ·2 chicken breasts, sliced into strips
  • ·1 tbsp olive oil
  • ·1 tsp ground cumin
  • ·1 tsp paprika
  • ·½ tsp garlic powder
  • ·Juice of ½ lime
  • ·Salt and black pepper, to taste

For the avocado slaw

  • ·1 cup shredded cabbage
  • ·½ avocado
  • ·Juice of ½ lime
  • ·1 tbsp olive oil
  • ·Small handful fresh coriander, chopped
  • ·Pinch salt

To serve

  • ·4 small gluten-free corn tortillas

Method

    Heat olive oil in a pan over medium heat.

    Add chicken, cumin, paprika and garlic powder. Cook 8–10 minutes until cooked through.

    Squeeze over lime juice and season with salt and pepper.

    Mash avocado with lime juice and olive oil until creamy.

    Add shredded cabbage and coriander; toss to combine.

    Warm tortillas in a dry pan for 30–60 seconds per side.
